Grease 8- or 9-inch round cake pan with cooking spray. • In large saucepan, combine diced apples, sugar, butter and spices. Heat over medium-low heat for 5 minutes, stirring often with wooden spoon, until sugar has almost caramelized. Remove from heat; set aside. • In large bowl, combine flour, brown sugar, butter, cinnamon, salt, and spices. Use your hands to break up the mixture until it is crumbly. Set aside 2/3 cup of the mixture to use for topping. • In separate bowl, combine eggs, pumpkin, yogurt, sugar, and baking soda. Gradually add dry ingredients to wet ingredients and stir until batter forms. • Pour batter into cake pan. Top with apple mixture from saucepan. Sprinkle with remaining crumb topping. • Bake 1 hour, or until toothpick inserted in center comes out clean. • Allow to cool completely on wire rack before serving. • This would pair perfectly with coffee!
