Following the Crumbs Pumpkin Apple Cake


INGREDIENTS

Apples:

2 large apples, cored and diced
2 tablespoons sugar
1 tablespoon salted butter, chilled and cubed
1 teaspoon cinnamon
¼ teaspoon nutmeg

Crumbs:

1 ½ cups flour
1 cup brown sugar
6 tablespoons unsalted butter, chilled, cubed
1 teaspoon cinnamon
½ teaspoon salt
¼ teaspoon nutmeg
¼ teaspoon allspice

Cake:

2 eggs
3/​4 cup pumpkin puree
1/​3 cup plain yogurt
2 tablespoons sugar
1 teaspoon baking soda

METHOD

• Pre-heat oven to 350 degrees. Grease 8- or 9-inch round cake pan with cooking spray.

• In large saucepan, combine diced apples, sugar, butter and spices. Heat over medium-low heat for 5 minutes, stirring often with wooden spoon, until sugar has almost caramelized. Remove from heat; set aside.

• In large bowl, combine flour, brown sugar, butter, cinnamon, salt, and spices. Use your hands to break up the mixture until it is crumbly. Set aside 2/​3 cup of the mixture to use for topping.

• In separate bowl, combine eggs, pumpkin, yogurt, sugar, and baking soda. Gradually add dry ingredients to wet ingredients and stir until batter forms.

• Pour batter into cake pan. Top with apple mixture from saucepan. Sprinkle with remaining crumb topping.

• Bake 1 hour, or until toothpick inserted in center comes out clean.

• Allow to cool completely on wire rack before serving.
